Our first blog, VeggieBalance , was and continues to be a record of the things I cook every day as I am a celiac with lupus. Or as I like to put it these days, an autoimmune warrior.
Here on Nom Nom Gluten Free we will be sharing a little bit of everything with a bit more emphasis on adapted gluten-free American classics. You don’t have to miss out on your favorite foods just because you have to follow a gluten-free diet!

Before figuring out our diseases I went vegetarian to try and get my health and life back (hence why we started VeggieBalance).
My body simply did not thrive on a vegetarian diet. I was feeling better as the extra veggies did help repair my body but later I found I am also MTHFR Homozygous C677t. Where consuming enough B12 and Folate in my diet is essential for my body to function and detox properly.
Here we’ll share a little bit of everything with more of an emphasis on everyday recipes made gluten-free.
