Ingredients

  • 2 cups gluten free flour blend
  • 2 cups yellow cornmeal
  • 2 1/2 Tablespoons baking powder
  • 1 1/2 teaspoons salt
  • 1/2 cup sugar
  • 4 whole eggs
  • 3/4 cup buttermilk
  • 1/3 cup extra light olive oil
  • 2 2/3 cups mashed sweet potato (canned yams can work as well)

Instructions

  • Preheat oven to 425 degrees F
  • Prepare large 9x13 pan by greasing bottom and sides.
  • Sift flour, cornmeal and baking powder together. Stir in salt and sugar.
  • In a large bowl whisk together eggs, buttermilk, olive oil, mashed sweet potato. Add wet ingredients to dry ingredients. Stir together until fully combined.
  • Pour into prepared 9x13 pan. Bake for 35-40 minutes, or until toothpick comes out clean.
